Is it just me, or do all Panic's applications look real good?
I'm a big fan of Candy Bar, myself.

I love TextWrangler, for editing code. It's free as well.
FileZilla, an FTP client, isn't very "Mac-like," but it's open source and has far fewer bugs than Cyberduck (which I used to use, but got fed up with how buggy it was...)
Some other apps I use (until I switched to Windows) include the GIMP and MAMP.

If you won't use pay-for apps then OS X is probably not the platform for you. The 'indie developer' ecosystem is somewhat stronger than other platforms, and developers need income!
